Combine 850g of mixed dried fruit (including raisins, sultanas, currants, and cranberries), 150g of glacé cherries (halved), 150g of chopped nuts, 150g of dried mixed peel, and the grated zest of 2 oranges and 2 lemons. Add 150ml of brandy or rum, mix well, and leave to soak overnight.

The Cake Batter

Next, it's time to prepare your cake batter. Cream together 225g of unsalted butter and 225g of soft brown sugar until light and fluffy. No Christmas feast would be complete without a traditional British Christmas pudding. Here's our Bake Off-inspired recipe that'll have your family singing carols and raising a glass (or two) of mulled wine.

The Pudding Mixture

Begin by preparing your pudding mixture. In a large bowl, combine 175g of suet (vegetarian suet is fine), 175g of soft brown sugar, 175g of self-raising flour, 1 tsp of mixed spice, 1 tsp of ground cinnamon, and a pinch of salt. Once steamed, leave the pudding to cool, then store in a cool, dry place until Christmas Day. To reheat, steam for 1-2 hours, then turn out and serve with a generous helping of brandy butter or custard.
