Snowflake Shortbread Cookies
Start with a classic – these beautiful snowflake shortbread cookies are the perfect way to get into the festive spirit. Crisp, buttery, and melt-in-your-mouth delicious, they're sure to become a staple in your holiday baking repertoire.
Ingredients: - 225g unsalted butter, softened - 100g caster sugar - 225g plain flour, plus extra for dusting - 50g cornflour - 1 tsp vanilla extract - 100g royal icing sugar, sifted - 1-2 tbsp water - Edible glitter, optional
- 1. Preheat your oven to 180°C (160°C fan) and line two baking trays with parchment paper.
- 2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
- 3. Sift in the flour and cornflour, then add the vanilla extract and mix until a dough forms.
- 4. Roll out the dough on a lightly floured surface to about 5mm thick. Cut out snowflake shapes using a cookie cutter and place them on the prepared trays.
- 5. Bake for 10-12 minutes, or until lightly golden. Allow to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
- 6. Once cool, mix the royal icing sugar with water to form a thick, smooth paste. Add more water or icing sugar as needed. Pipe or spread the icing onto the cooled cookies and add edible glitter, if desired. Allow to set before serving.
Mulled Wine & Spice Christmas Cake
This rich, fruity cake is the perfect centrepiece for any holiday gathering. Packed with festive flavors like mulled wine, dried fruits, and warm spices, it's sure to become a new family favorite.
Ingredients: - 225g unsalted butter, softened - 225g dark brown sugar - 4 large eggs - 275g plain flour - 1 tsp baking powder - 1 tsp mixed spice - 1 tsp ground cinnamon - 1/2 tsp ground nutmeg - 75g ground almonds - 175g mixed dried fruit - 75g glacé cherries, halved - Zest of 1 orange - Zest of 1 lemon - 150ml mulled wine - 75ml brandy or orange juice (optional)
- 1. Preheat your oven to 150°C (130°C fan) and line a deep 20cm round cake tin with parchment paper.
- 2. In a large bowl, cream together the butter and dark brown sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition.
- 3. Sift in the flour, baking powder, mixed spice, cinnamon, and nutmeg. Add the ground almonds, dried fruit, glacé cherries, orange zest, and lemon zest. Mix well to combine.
- 4. Fold in the mulled wine and brandy or orange juice (if using). The mixture should be quite thick and sticky.
- 5. Spoon the mixture into the prepared cake tin and smooth the top with the back of a spoon. Bake for 1 hour and 15 minutes, or until a skewer inserted into the center comes out clean. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
